MIDDLE AGES

The Middle Ages is an extremely broad concept. The dishes in the photos mainly belong to the 15th and maybe even the 16th century. Some of them are related to our space, with the main inspiration being the travel diary of Paolo Santonino, while the others were created during my work as a kitchen manager in a medieval restaurant in Denmark. Most of them are preserved and partly processed recipes from English or German sources.
