Behind the revival of flavors is Polona Janežič, archaeologist and business organizer in hospitality and tourism. My work is based on my knowledge of archaeological, ethnological, and culinary heritage. When I finished my first degree, I continued my studies out of necessity and enrolled in hospitality and tourism. In the end, it turned out that this profession also suited me, although not in its classic form. Already during my education, I developed a curiosity about culinary heritage, and I discovered my passion by organizing an interesting event on historical food in the capital. My career path led me from fieldwork to museum archaeology and from assistant chef to head chef in Denmark, where we prepared dishes according to preserved medieval recipes. During the pandemic, I began to develop my photography skills, and in recent years, I have been using this medium to present archaeological, ethnological, and culinary heritage. You can meet me at various events where I prepare catering and workshops, and I am also involved in developing historical menus.
