Polona and I met while preparing my first book on foraging, Nature Always Wins. I met her just before the book was published, but she impressed me so much with her research into historical food that I asked her to contribute her own recipe alongside those of top chefs. I find her knowledge important because I seek my roots in it and think about nature as it used to be. At the same time, her workshops are an unforgettable experience.
